
Chicken and Sun Dried Tomato Flatbread Pizza

Ingredients for the flatbread
1 teaspoon of instant yeast
1 teaspoon of sugar
3/4 cup of warm water
2 cups of all purpose flour
1 Tablespoon of olive oil
1 teaspoon of salt
1 teaspoon garlic powder
1 teaspoon of onion powder
1 teaspoon Italian seasoning
1/2 teaspoon of paprika
Pizza Toppings
Sauce
Cheese of choice
Bacon bits
Sun dried tomatoes
Green olives
Sriracha sauce
Instructions for the flatbread
Whisk the yeast, sugar, and warm water together in the bowl of your stand mixer. Loosely cover and allow to sit for 5–10 minutes until foamy and frothy on top.
Add the flour, olive oil, salt and all seasonings. Mix on low speed with the dough hook attachment until combined, about 2 minutes. The dough should be thick, yet soft and slightly sticky. It should pull away from the sides of the bowl as it mixes. When it does, it is ready to knead.
Kneading the dough! Keep the dough in the mixer and beat for an additional 6-8 full minutes with the dough hook.
Place the dough in a greased bowl and let rest an hour.
Preheat oven to 425 degrees Fahrenheit, line a pizza sheet with parchment paper and set aside.
Add a small amount of flour to a clean surface and roll out the dough to fit the size of your pizza pan.
Instructions for the toppings
Add some sauce, cheese of choice, chopped up pieces of Italian style chicken, real bacon bits, sun dried tomatoes, green olives and a touch more cheese. Drizzle on some sriracha sauce if you like a little spice in your life.
Bake in oven on top rack for about 12- 14 minutes. Check it around the 6 minute mark to brown more evenly.
