Blueberry Banana Bread

This is a great recipe when you only have 2 ripe bananas, instead of the tree that are normally required for a traditional banana bread recipe.
Ingredients
2 cups all purpose flour + 1 tablespoon to coat the blueberries
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/4 cup margarine
1 cup mashed ripe bananas (2 medium bananas)
2 eggs
1 container of Greek yogurt (chocolate mix set aside) See picture below
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries plus more for the top of the bread

I used this yogurt for my recipe. One container only and keep the chocolate chip mixture for the top of the bread.

Instructions
Preheat oven to 350 degrees F.
Coat a bread pan with cooking spray
In a medium bowl, combine the 2 cups of flour, baking soda, and salt.l, set aside.
In a separate bowl add, granulated sugar and margarine, beat with a mixer at medium speed until mixture is fluffy and well blended.
Add eggs, bananas, yogurt and vanilla; beat in between each ingredient, until all ingredients are blended. Add flour mixture; beat at low speed just until moist.
Place the blueberries in a bowl with 1 tablespoon of flour and toss to coat.
Gently fold blueberries into the batter. Spoon batter into a bread pan coated with cooking spray. Press additional blueberries into the top of the batter. Sprinkle on chocolate mix from yogurt.
Bake for 60-70 minutes or until a wooden toothpick, inserted in center comes out clean. Cool the bread 10 minutes in pan on a wire rack; remove the bread from pan. Finish cooling in rack.
