Carrot Hotdogs

Years ago when my husband and I had started eating plant based meals, this was a recipe that I was always interested in trying it, however, my skills weren't quite as good as the are now, so I just couldn't wrap my mind around the idea of using a carrot as a hotdog.


As I had a bunch of carrots to use up, 3 bags or 6 pounds of carrots 😂 so I figured since it wouldn't be too much of a waste, I decided to give it a go. Boy am I glad that I did and I'm kind of kicking myself for not doing it before now. 🤷‍♀️


Ingredients


  • 1 cup of soya sauce

  • 1 cup of vegetable stock

  • 2 tablespoons of lemon juice

  • 1 tablespoons of sriracha sauce

  • 2 tablespoons of maple syrup

  • 1 tablespoon of smoked paprika

  • 1/2 tablespoon of white vinegar

  • 1 tsp. onion powder

  • 1 tsp. garlic powder

  • ½ teaspoon of ginger powder

  • ½ teaspoon of black pepper

  • 1 tablespoon of hickory chips

  • 3 to 4 medium carrots

Instructions


Peel carrots and cut them to hotdog size, keep the peels, carrot end, then add them with the carrots and hickory chips to a pot and cover with enough water to cover the carrots and boil on medium for about 10 minutes or until you can poke the carrots with a fork (don't overcook as you don't want mushy). Once cooked you are going to strain the water/vegetable broth into a bowl to use for the marinade.

Take the carrots and put them in a separate bowl with cold water and add them to the water immediately to stop the cooking process. Drain carrots and add to either the covered container or ziplock bag with the marinade and let marinade overnight if possible but at least 5 hours before cooking.



While the carrots and broth are cooking, mix all the other ingredients in a covered container or ziplock bag. Mixed well and make sure to cover the carrots with the marinade.

To cook


  1. Preheat oven to 425°. Add carrots and 1 cup of marinade to a oven safe glass dish. Place foil over your baking dish then place in preheated oven and roast carrots for 35 minutes. Remove the foil and roast for another 20 minutes, until the carrots are just tender enough to stab with a fork.

  2. Serve immediately with your favourite hotdog toppings and enjoy!
