Potato Salad

I love a good potato salad recipe. The best part is that a potato salad can be made so many different ways, it's so easy and a healthy snack, side dish or even lunch!!
Although I do have some basics that I keep the same like the dressing and potatoes š I'm all about trying different ways to make one recipe, that much more tasty!
Potato salad ingredients
Potatoes (clean, chopped and boiled)
Chopped peppers (1/4 of each red, yellow and orange peppers)
1 medium chopped up jalapeƱo (optional)
1 cup of cooked frozen corn
1 small green apple
1/4 cup of cranberries

Again as long as you have the potatoes (I leave the peels on mine) you can add whatever veggies you want! š

Dressing recipe
2 cups of unsweetened coconut yogurt for vegan, Greek yogurt or mayo for non vegan
2 teaspoons Dijon mustard
1 teaspoons yellow mustard
1 teaspoons of garlic purƩe
3 tablespoons of lemon juice
1 teaspoon of pink salt
black pepper to taste
1/8 cup of relish
Combine everything together well and add to cooled potato salad. Chill salad in fridge until ready to serve.
