Vegan Burrito Meatballs

So this recipe was one of those AHHA moments that I seem to have a lot of lately as I'm very indecisive about making meals. 🫤


I decided yesterday that I was going to make a nice spaghetti dinner so I took out a pack of Yves ground round from my freezer and defrosted it in the fridge overnight. Great, dinner decided and woke up thinking about other things that I could do with my spare time as I had dinner all figured out, spaghetti. 😂


Almost made it to lunchtime when I suddenly realized I didn't want spaghetti. 🙄 Then I remembered the leftover vegan burrito bowl I had left from dinner last night, that we treated ourselves to from a little restaurant called Taco Boyz in Moncton.


So I used the one pack of Yves ground round and added it to the leftover burrito bowl with corn, rice, beans, jalapeño, tomatoes, guacamole, cranberry dressing, candied jalapeños sauce, salsa, sriracha sauce, banana peppers mixed it together!

I then added everything to a larger bowl to make it easier to mix.

I then blended the burrito bowl mixture and ground round together well and added 1 cup of quick oats and blended it well then added a 1/2 more oats until I was able to press everything together into a meatball shape.


Get a baking tray and spray well with baking spray or line with parchment paper. Turn oven on at 375 degrees and make sure the rack is on the top level.

Once oven is preheated add to the baking sheet with meatballs to the top rack and bake for about 30 minutes, checking on them halfway through and turning them over before continuing to bake.

Now once complete let cooled at room temperature, get your sauce going. I used 2 cups of sauce.

I'm just using a Primo original spaghetti sauce, heated up then tossed in a few meatballs to reheat them!


I always grab one of these sauces at least once a month and open the can then divide it into containers and freeze it.


Much cheaper and we don't shop at Costco anymore because it's just the two of us and buying a year membership for a few bulk items, isn't worth it to us. So all our bulk purchases are at our local Wholesale Club.

Once your sauce is bubbling, add the meatballs and stir them well to cover them with sauce. Then turn down the heat to a simmer for about 10 minutes to reheat the meatballs.

Once everything is nice and heated, scoop out a few meatballs into a sub bun and top with cheese (use vegan cheese for fully vegan recipe).

Turn the oven on 350 and add your subs to a tray and bake until the cheese is melted and bubbly!

Then the vegan burrito meatball is created and you just need to enjoy it! 🤭
