Fruit BBQ Spread

There's nothing like making a good batch of BBQ sauce/spread, especially when you're garden is starting to grow.
Rhubarb is always the first thing to come in my garden and although I don't have a big batch planted, I like to use up whatever I do get and make a bbq sauce with it.
This is a simple recipe that you can cook in about an hour, all in one pot and is extremely delicious.
Ingredients
2 cups of chopped rhubarb
2 cups of chopped apples
2 cups of chopped pears
3 1/2 cups of brown sugar
1/2 cup of chopped onions
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 teaspoon of smoked paprika
1 teaspoon of garlic purée
1 tablespoon of puréed ginger
1 teaspoon of salt
1/2 cup of white vinegar
1 1/2 cups of chopped dried cranberries

Instructions
Add all ingredients to a large pot and cook on a medium high heat to start boiling the mixture, stirring frequently so it doesn't stick. Allow to cook on medium heat until the fruit has broken down using a potato masher to mash the mixture in between stirring to help cook faster. Turn heat down to simmer until everything is cooked down and begins to gel.
Remove from heat and add to jars. If you're still finding a few pieces of apples or pears haven't fully cooked down, take the cooled mixture and add to a blender and blend until smooth before adding to your jars.
I store mine in mason jars and keep it in the fridge up to a month, I freeze the difference in freezer bags portioned for up to 6 months.
