Homemade Ground Round

Ground round is a plant based food that I use to supplement regular recipes that have hamburger in them.
The main ingredients in my homemade recipe includes cauliflower, mushrooms, onions. From there add my seasoning and walnuts. Now if you have an allergy to nuts, just leave them out completely, the only difference it'll make in the recipe is giving it a bit more chewy texture, I have been fortunate to not have allergies so I add them when I can afford them.
Normally I have pictures to follow along with but I did this recipe as a video so the link will be at the end for you to watch and see how to mix it all together.
Now this is one of those recipes that you can easily make a few batches of at the same time and use it for recipes later in the week or freeze them and use up to 3 months later for your recipes.
Ingredients for 1 batch!!
Main ingredients
1 head of cauliflower chopped finely or pulsed into a rice blend.
1/4 medium onion pulsed or finely chopped
1/4 pound of cremini mushrooms pulsed or finely chopped
1 teaspoon of vegetable oil
If you have no allergies add a 1/2 cup of pulsed or finely chopped walnuts to the mixture! Gives it more depth in flavour and texture but will work fine without it as well.
Preheat oven at 375 degrees line a baking sheet with parchment paper and set aside. Have the oven rack set second from the top and second from the bottom if you're doing more then one batch at a time.
In a large bowl, mix everything together. This is now your standard recipe for the ground round and now you can add different types of seasonings to flavour the ground round with. If you're looking for a basic recipe to make something like a vegan shepherd's pie as an example you will add the following ingredients to the mixture.
Italian seasoning
1 tablespoon of Italian seasoning
1/2 tablespoon of garlic purée
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of nutritional yeast (optional)
1/8 cup of soya sauce
Blend well with the vegetable/walnut mixture then spread evenly over the baking sheet with parchment paper. Add the pan to the preheated oven and bake for about 20 to 30 minutes or until browned like a cooked "hamburger". Check every 5 minutes and use a fork to fluff the ground round to help it cook evenly. EDIT I've had to cook it up to an hour before it really dehydrated if not using walnuts.
Remove from heat fluff with fork and allow to cool a few minutes before serving or using in a recipe like shepherd pie.

Mexican blend
1 tablespoon of chilli powder
3/4 tablespoon of smoked paprika
2 tablespoons of sriracha sauce (optional)
1/2 tablespoon of garlic purée
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of nutritional yeast (optional)
1/8 cup of soya sauce
Blend well with the vegetable/walnut mixture then spread evenly over the baking sheet with parchment paper. Add the pan to the preheated oven and bake for about 20 to 30 minutes or until browned like a cooked "hamburger". Check every 5 minutes and use a fork to fluff the ground round to help it cook evenly.
Remove from heat fluff with fork and allow to cool a few minutes before serving or using in a recipe like tacos, burritos and chilli.

I usually portion about a half a medium freezer bag full of cooked ground round and freeze them for future use (up to three months). As I normally use it from frozen for things like tacos, it's enough "meat" mix as we add fresh veggies and a taco shell so we end up with about 3 to 4 tacos each with half a bag full.
